It’s been awhile since I’ve made a post… since Spring Break time. Obviously school has distracted me from blog time. I guess that is good a thing (as opposed to the other way around). Wednesday night, you can usually find D and I snuggled on the couch watching one of our faves- Modern Family. In the latest episode the parents end up together by themselves sitting on the beach. They make a vow to do that at least once a month. Today D and I went to the beach just to sit and relax. We only live about 1.5 miles away from the beach, yet we hardly make the time to go. We decided to be like the modern family parents and try to go at least once a month if not more. Hopefully we remember to keep to this.
Growing up one of my favorite Old Testament verses was “Be still and know I am God.” As each year passes and my daily to-do lists grow longer and longer I understand the importance of this verse more and more. I need to take more moments to be still and be grateful for the life I have- for the big things and the little things… like sand between my toes.

Day Trip to Islamorada:
D and I had our spring break from school this past week, however we both had to work a lot. This was our little piece of paradise during a busy spring break.

Happy 2 years to me and D! These hydrangeas are actually a few days old from the fresh market. They were a nice surprise to come home to!
Dinner is served by yours truly. Seasoned pork chops from the skillet with mashed potatoes and roasted veggies. (not shown) appetizer salad… Didn’t have croutons so I made mini latkes with an extra potato in their place.

I’m back! Adjusting to yet another crazy busy schedule. But I am loving life! New apartment (great new place to come home to each day). This photo… me trying to study but having no productivity… too sleepy! Oh and yes I am NOT wearing sandals (even though I can in January down here) I run or workout in at least one of classes each school day. Oh the life of an exercise science major.. staying fit!
Confession
Okay I confess… I really loath my schedule right now. I transferred to a new University this fall. I got the last pick at classes which means my class times suck which leads to my work schedule also sucking…which leads to be being in a constant state of exhaustion. Annnnnd because of this I never feel like running. It used to not have to take much convincing (by me or anyone else) to go on a run or head to the gym, but I’ve never felt so exhausted. I left school in tears Friday morning. I, along with other students in my Intro to Exercise Science class, was a subject for a series of fitness tests for seniors to practice on. After my assessment, the girl (who is only a year older than myself) told me the results. Not only was my level of fitness…unfit (for lack of better terms), but according to my muscle to fat ratio, I fell between fit and average. This isn’t a terrible thing, but when after she read that to me, she followed by saying, “you might want to work on that.” Ouch! Don’t worry guys, I’m not going to stop eating or any of that crazy non-sense, I just felt extremely embarrassed and disappointed in myself. I’m an out-of-shape exercise science major. I feel like I will never find the balance between school, work, volunteering, and actually taking care of myself like I should. I wish graduation were closer….
What is this? Toast with cottage cheese, EVOO sauteed spinach and chickpeas with a dash of salt and pepper. Probably may seem gross. It’s DELICIOUS. My nutrition professor last spring inspired me to be more experimental with my food. Sometimes my experiments are not so great, but sometimes (like today) they turn out quite lovely!
